Nitro coffee is cold brew infused with nitrogen gas (N₂). The result is a drink with a creamy, velvety texture and a layer of fine foam — without any milk at all.
How does it work?
Cold brew is combined with nitrogen under pressure and poured through a tap, similar to how beer comes out of a tap. Nitrogen gas creates extremely fine bubbles in the liquid. Those tiny bubbles give the smooth, almost milk-like mouthfeel. CO₂ — the gas in soda — creates larger bubbles and a sharp fizz. Nitrogen creates smaller bubbles and a smooth texture without that fizz.
In the US, nitro coffee became common in specialty cafés. Starbucks rolled it out widely in 2016. Small specialty cafés use it as a texture showcase.

Making nitro coffee at home requires equipment: a nitrogen capsule system or ready-made nitro cans. The quality of ready-made cans varies a lot. A home tap system is possible but requires investment.
Quality starts with the base
Nitro is a technique, not a quality marker. The base is always cold brew, and the quality of that cold brew determines the result. Nitro on good cold brew made from specialty beans is a completely different experience than a can from a gas station.

Does nitro coffee have more caffeine?
Not from the nitrogen itself. The caffeine in nitro coffee comes from the cold brew base. Cold brew typically has a higher caffeine concentration than drip coffee, because it’s brewed for a long time at a higher coffee-to-water ratio. The higher caffeine comes from the cold brew, not the gas.
What makes nitro coffee creamy without milk?
The creaminess comes from nitrogen gas. Nitrogen (N₂) dissolves into the liquid under pressure. When it flows through a tap with small openings, it forms extremely fine bubbles, creating a smooth, milk-like mouthfeel. The effect is similar to a pint of Guinness. It’s about bubble size, not cream or milk.
Is nitro coffee healthy?
Nitro coffee has the same nutritional profile as regular black coffee: no calories, no sugar, no fat — unless something’s been added. The nitrogen has no nutritional value and is harmless. What does matter: the higher caffeine concentration from the cold brew base. If you’re sensitive to caffeine, adjust the amount accordingly.
